Recipe of the Month

Oven Roasted Carrots

  • 2 1/2 pounds carrots, peeled and cut into sticks 3 inches (7 1/2 cm) long and 1/2 inch (12 mm) wide

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1 to 2 limes (optional)

  • 2 tablespoons honey

  • 1/8 teaspoon cayenne pepper, or to taste

Preheat the oven to 400°F (200°C). Position 2 oven racks in the centermost positions. Line 2 rimmed baking sheets with parchment paper.

In a large bowl or on a baking sheet, combine the carrots, oil, and salt and toss to coat evenly. Divvy the carrots up between the baking sheets and spread them in a single layer. Roast the carrots, turning them once, until tender and lightly caramelized in spots, 25 to 30 minutes.

Meanwhile, if using the lime, finely grate the zest from a single lime and set it aside. Halve the lime and squeeze enough juice to measure 1 1/2 tablespoons, using a second lime if necessary.

About 5 minutes before the carrots are done, in a small saucepan over medium heat, combine the honey, cayenne pepper, and lime zest and juice, if using, and stir just until hot and bubbly. Remove the pan from the oven, pour the honey mixture over the carrots, and turn them to coat well.

Community Service Hits Home this Season

4th Annual “Do GOOD for Deb” Weekend of Community Service and Acts of Kindness

This year marks 13 years since Bee Veda’s Allie Tice lost her Mom to metastatic breast cancer. The illness that took her was not what defined her. Allie’s Mom was caring, big-hearted, and kind. She loved to be in service to her community and relished an opportunity to give back. The annual "Do GOOD for Deb" celebration is our way of honoring her legacy of kindness and care.

We’d love for you to participate!

We recognize that COVID-19 has made this holiday season challenging, and that's why we compiled a list of 10 safe ways to participate. Choose one, several, or feel free to create your own!

Take a pic and tag the event with #dogoodfordeb—share with your social networks and spread the word!

The event is active from 11/27-11/29…and beyond!

Safe Suggestions:

  1. Neighborhood trash pick-up

  2. Reach out to a neighbor or friend via text or send a hand-written note

  3. Donate- do a closet clean-out and donate the clothes to a charity or your local Emergency Department or donate to a local food bank

  4. Hang a bird feeder in your yard (Mom LOVED to feed the birds)

  5. Let someone go ahead of you at the grocery store

  6. Offer a kind word or compliment to a stranger (a Deb fave)

  7. Send a thank you note or email to your child's teacher (just because)

  8. Leave a note or treat in your mailbox for your mail carrier

  9. Follow someone who doesn't look like you on social media

  10. Leave a positive review for your favorite local restaurants and small businesses (They really need us right now)

  11. Give an extra long hug to someone in your home
